Glazed Peach Crumb Muffins

Welcome to THE muffin recipe of this summer ๐Ÿ˜Š these muffins have totally taken over my muffin world and left me weak in the knees ๐Ÿ˜„

Soft and tender, moist and fluffy and studded with juicy chunks of peaches all throughout the muffin. Lightly spiced with cinnamon, which is wonderful with peach, and paired with brown sugar takes these muffins completely out of this world.

The muffins are topped with a super easy crumbย  topping, just brown and ย white sugar, cinnamon, flour and some melted butter. These crumbs take the muffins over the top and with a simple glaze to finish OMG!

Make sure to gently push the crumbs into the tops of the muffins so they don’t ย fall off as the muffins bake and rise. It may seem like too much crumb but trust me, it’s notย  ๐Ÿ™‚

I actually made these muffins the night before, love havin em ready to gobble up in the morning but I did have the pleasure of eating one warm, it’s ย the best! So buttery and warm, perfectly spiced and crumbly, I love it!

Peach Crumb Muffins

Makes 12 large muffins or up to 16 smaller muffins

Ingredientsย 

Crumb topping

  • 5 tablespoons soft brown sugar
  • 1 tablespoon white sugar
  • 1 teaspoon cinnamon
  • 2/3 cups flour (42gms)
  • 1/4 cup (50gms) melted butter
  • Pinch of salt

Peach muffins

  • 2 3/4 cups (340gms) flour*
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1 teaspoon cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (100gms) soft brown sugar
  • 1/4 cup (50gms) white sugar
  • 1/3 cup (65gms) melted butter
  • 1/4 cup (60mls) oil
  • 1 cup (250mls) buttermilk**
  • 1 1/4 cups chopped peaches

Glaze

  • 1/2 cup (125gms) icing sugar
  • 1 tablespoon cream or milk
  • 1/4 teaspoon vanilla extract

Methodย 

  1. Preheat oven to 200C. Grease and flour a muffin tray or line with cupcake liners.
  2. In a bowl, make the crumb topping, whisk together the sugars, cinnamon, flour and salt. Pour in the melted butter and whisk with a fork until combined and crumbly. Set aside.
  3. In a separate bowl, whisk together ย the flour, baking powder and soda, cinnamon and salt until well combined.
  4. In another large bowl, whisk together the eggs, vanilla, both sugars, melted butter and oil until well combined. Add in half of the flour mix then the buttermilk then the rest of the flour mix. Whisk only until just combined. Batter will be thick. Gently fold in the peach chunks.
  5. Divide ย the batter into the muffin tray filling each one all the way to the top. Crumble the crumb topping over the muffins, pushing slightly into the tops of each. Make sure to use all of the crumbs.
  6. Bake for 8 minutes then lower heat to 180C, keeping the muffins inside the oven, and bake for 11 – 14 minutes until cooked through.
  7. Remove from the oven and cool slightly before glazing.

To make the glaze

  1. Whisk ingredients together until smooth adding more or less cream as needed to make a slightly thick glaze.
  2. Drizzle over warm muffin tops and serve.

Store muffins in an air tight container for up to 3 days.

*If you’re using extra juicy peaches or even canned peaches, add an extra 1/4 cup flour to make sure the muffins don’t get too wet or soggy.

**To make your own buttermilk, measure 1 cup/250mls milk in a cup . Remove 1 tablespoon milk and replace with 1 tablespoon white vinegar. Stand for about 5 minutes while you prepare the batter then whisk and use as stated in the recipe. Some of this buttermilk can be substituted with peach puree, about 1/3 cup.

    In case the match is not played or suspended, all bets will be voided.
    1X2 – First 5 Minutes.

    You have to predict the outcome of the first five (5)
    minutes. There are 3 possible outcomes: 1 (the home team wins), X (the teams draw), 2 (the away team wins).
    Events must happen between 0:00 and 04:59 to be classed in the first 5 minutes.
    Official reports of the leagues organizing the events will be used to determine the correct outcome.

    You have to predict if the total number of goals scored during the entire match will be over

    of the game before it starts.

    HALTTIME MORE GOALS : this means that you are staking your bet
    that there will be more goals scored in first half than in second half.
    NO HALFTIME MORE GOALS : this means that you are staking your bet that there is not going to be any goal scored in first half .
    2ND HALF MORE GOALS : this means that you are staking your bet that there will be more goals
    scored in second half than in first half.

    HOME OV1.5 : MINIMUM OF 2GOALS FROM HOME TEAM. Home Team
    will score at least 2 goals or more before
    the end of the match. HOME UN1.5 : LESS THAN 2GOALS FROM HOME
    TEAM. Home Team will not score up to 2 goals before the end of the match.
    AWAY OV1.5 : MINIMUM OF 2 GOALS FROM AWAY TEAM. Away team will score at
    least 2 goals or more. 2 goals or more, then you won the bet but if the away team scored just 1 goal
    or no goal at all before the end of the game, then you lost the bet.
    AWAY UN1.5 : LESS THAN 2 GOALS FROM AWAY TEAM. Away team will not score up to 2 goals or no goals at all before the end of the game.

    2 goals or no goals at all, then you won the bet but if the away team scored just 2 or more goals before the end of the game, then you lost the bet.
    HT/ST/ 1/1 : HOME WIN 1ST HALF & 2ND HALF. Home team must be
    leading in score before first half ends and also they
    must be leading second half score too before it ended.
    HT/ST/1/X HOME WIN 1ST HALF DRAW 2ND HALF. Draw
    Second half score. Home team must be leading in score before first half ends and then must Draw Second half score too before it
    ended.

    Draw second half score without joining the scores from any of the half time.
    HT/ST/1/2 : HOME WIN 1ST HALF AWAY WIN 2ND HALF.
    Away Team Would Win Second half score. Home team must be leading in score before first half ends and Away Team must Be Leading in score Before Second half Ends Too.

    Home team leads In first half score and then Leads Or Draw second half Score,
    then you lost the bet. Home Team must be leading in first half and The Away Team
    must be leading in second half score without joining the scores from any of the half time.
    HT/ST/X/1 : DRAW 1ST HALF HOME WIN 2ND HALF. Draw in first
    half score and then the Home Team must win second
    half score.

    Home Team must win. HT/ST/X/X : DRAW 1ST HALF AND 2ND HALF.
    Draw Both In First Half And Second Half. HT/ST/X/2 : DRAW 1ST HALF AWAY WIN 2ND HALF.

    bet type. EVEN : 2 OR 4 OR 6 OR 8 OR 10 OR 12 OR 14 GOALS.
    EVEN Number. even numbers are numbers that can be divided
    by 2 without 1 remaining as seen on Odd Numbers. EVEN number includes 2, 4, 6, 8,
    10, 12, 14, 16, 18, 20 etc. just keep on adding 2 to the number, the outcome will be an EVEN Number.

    2, it gives you EVEN number without remainder of 1.
    with this example, lets use it on the football match.
    1-1, 2-0, 3-1, 4-2 etc. when you add the score line together and it gives
    you an EVEN number, then you won the game. 1-1, it gives
    you 2 which is an even number. 0, it gives you 2 which is
    an even number. 1, it gives you 4 which is an EVEN Number.
